This Japanese Higonokami knife has a core of Japanese Aogami # 1 "Blue paper" carbon steel (non-stainless). This double-sided sharpened knife is completely forged by the only master smith who is allowed to make Higonokami knives (Motosuke Nagao). The blade is sturdy and manually sharpened and is very easy to sharpen yourself. This is the original version with a brass handle and Aogami steel blade (Sanmai forged). This edition has a notch in the handle to make it easier to remove the knife from the handle.

CARE INSTRUCTIONS: Wash knife immediately after use with water. Dry the surface of the knife by pouring hot water of it and wipe this off with a tissue. Apply oil and then wipe off the oil with a tissue. Put the knife in to a dry storage space. If you leave the knife wet or with food on it, it will rust.
