Crafted using traditional Japanese woodworking techniques, the Hangiri (also known as Handai) is an essential vessel in the preparation of authentic sushi rice. For centuries, Japanese chefs have relied on these beautifully handcrafted tubs to cool and season freshly cooked rice, allowing excess moisture to evaporate while preserving the perfect texture and glossy finish required for sushi.
Traditionally made from natural cypress wood and bound with copper hoops, the Hangiri represents the refinement and craftsmanship of Japan's culinary heritage. The wood naturally absorbs excess moisture, helping to create rice that is light, fluffy, and evenly seasoned.
Usage
The Hangiri is primarily used for preparing sushi rice. After cooking, hot rice is transferred into the tub where sushi vinegar is gently folded through while the rice is cooled using a fan. The wide, shallow design promotes rapid cooling and even seasoning. It may also be used for serving rice at the table or for preparing mixed rice dishes.
Care Instructions
To maintain the beauty and longevity of your Hangiri:
- Before first use, it is recommended to remove any natural bitterness from the wood. Submerge the product in a sink or basin filled with water and add 2 - 3 small cups of vinegar. Allow it to soak for 2 - 3 hours (rice water may also be used as an effective alternative). Once soaked, rinse lightly with clean water and allow it to air dry in a shaded area before use.
- Prior to each use, lightly dampen the interior to reduce staining and prevent rice from sticking.
- Hand wash only using warm water and a soft cloth or sponge.
- Do not use detergents, bleach, or abrasive cleaning products, as these may damage the natural wood.
- Dry completely after washing and store in a well-ventilated area away from direct sunlight.
- Never place in a dishwasher, microwave, or soak for prolonged periods.
- As a natural wood product, slight changes in colour and grain over time are normal and enhance its character.
- When not used for an extended period, the wood may dry and contract, causing the hoops to loosen or minor leaks to occur. If a hoop becomes loose, simply reposition it by turning the tub upside down and sliding the hoop back into place. Fill the tub with water and allow it to stand for a short time. As the wood absorbs moisture, it naturally expands, helping to secure the hoops and restore a watertight seal.
