The Suribachi (grinding bowl/mortar) and Surikogi (wooden pestle) have been indispensable tools in Japanese kitchens for centuries, used to grind, crush, and blend ingredients while preserving their natural flavours and aromas. This authentic set pairs a handcrafted Dachi-yaki ceramic Suribachi with a traditional Sansho wood Surikogi, bringing together two time-honoured crafts that remain essential in both professional and home kitchens throughout Japan.
Produced using traditional pottery techniques, Dachi-yaki ceramics are valued for their durability, warmth, and artisanal character. The interior of the Suribachi features finely combed ridges (kushime) that efficiently grind ingredients without excessive crushing, allowing flavours and textures to develop naturally.
Complementing the bowl is a handcrafted Surikogi made from Japanese Sansho wood (Japanese pepper tree), a material traditionally favoured for its hardness, durability, and gentle interaction with ceramic surfaces. Unlike stone or metal pestles, Sansho wood will not damage the ridges of the Suribachi, ensuring years of reliable use.
Usage
Ideal for grinding sesame seeds, spices, herbs, nuts, miso, dressings, sauces, and marinades, the Suribachi and Surikogi allow ingredients to be processed gradually and precisely.
To use, place ingredients into the bowl and move the pestle in a circular motion against the ridged interior. The textured surface gently breaks down ingredients, releasing their essential oils and enhancing flavour. The bowl may also be used for mixing and serving dressings, sauces, and traditional Japanese preparations.
Care Instructions
Suribachi (Ceramic Bowl)
- Wash by hand with warm water and mild detergent before first use.
- Dry thoroughly before storing.
- Avoid sudden temperature changes, which may cause cracking.
- Dishwasher safe only if specified by the manufacturer; hand washing is recommended to preserve the finish.
- Take care when cleaning the ridged interior, using a soft brush if necessary.
Surikogi (Sansho Wood Pestle)
- Hand wash only with warm water.
- Do not soak for prolonged periods.
- Dry immediately after washing and allow to air dry completely.
- Avoid dishwashers, direct sunlight, and excessive heat.
- As a natural wood product, variations in grain, colour, and texture are part of its authentic character.
