Crafted in Japan by Chojiro, one of the country's most respected makers of traditional Oroshiki, or "sharkskin graters", this exceptional tool embodies generations of Japanese culinary craftsmanship. Produced by artisans in Gifu Prefecture, Chojiro graters are highly regarded by professional sushi chefs and fine dining establishments throughout Japan for their precision, quality, and authenticity.

Please note, traditional Japanese wasabi graters (oroshiki) are classically known as "shark skin" graters (samegawa oroshi). However, in practice, the skin of rays - like fan rays or guitarfish - is also used and is often preferred due to its similar but slightly finer texture and sustainability

Each grater is meticulously handcrafted using genuine shark or ray skin, mounted onto premium Japanese cypress (hinoki), a wood treasured for its natural beauty, fragrance, and durability. For centuries, sharkskin has been considered the finest surface for grating fresh wasabi, capable of producing a remarkably smooth, creamy paste that preserves the ingredient’s delicate aroma, natural sweetness, and refined heat.

Unlike conventional metal graters, which crush the fibres of the wasabi root, the textured surface of genuine sharkskin gently cuts and refines the fibres. This traditional method enhances fragrance, softens bitterness, and creates the velvety texture prized in authentic Japanese cuisine.

Made in Japan by Chojiro, this authentic wasabi cleaning brush reflects the meticulous attention to detail and respect for ingredients that define Japanese culinary culture. For generations, chefs have carefully prepared fresh wasabi by gently cleaning the root before grating, ensuring its delicate flavour and aroma remain uncompromised.

Crafted with natural bristles and a wooden handle, the Chojiro Wasabi Brush is specifically designed to clean fresh wasabi roots without damaging their skin, making it an essential tool for the authentic preparation of wasabi.

Before grating, rinse the fresh wasabi root under cool running water and use the brush to gently remove any soil or impurities from the surface. Cleaning the root thoroughly helps preserve its purity of flavour and ensures the finest possible texture when grated.

Ideal for use with fresh wasabi, the brush may also be used for cleaning other delicate root vegetables and specialty produce.

After use, rinse thoroughly with clean water. Shake off excess moisture and allow to air dry naturally in a well-ventilated area. Avoid prolonged soaking in water and do not place in a dishwasher. Store in a dry place away from direct sunlight and excessive humidity. As a natural wood product, slight variations in colour, grain, and texture are part of its unique character.

How to Use

Before grating, gently clean the fresh wasabi root with the brush to remove any dirt. Grate in small circular motions, beginning from the stem end of the root. As the wasabi develops a fine, creamy consistency, its full flavour and aroma are released, creating an authentic accompaniment to sushi, sashimi, soba, and other refined dishes.

Care Instructions

To preserve the quality and longevity of your grater:

  • Rinse gently with water immediately after use.
  • Allow to dry naturally in a shaded, well-ventilated area.
  • Do not soak in water or hot water.
  • Not dishwasher safe.
  • Avoid direct sunlight and prolonged exposure to moisture.
  • Do not use repeatedly while the sharkskin surface remains damp, as excess moisture may weaken the natural adhesion of the skin over time.
  • Allow the grater to rest and dry thoroughly between uses.

For frequent use, traditional craftsmen recommend alternating between two graters, allowing each to dry completely and extending its lifespan.

Chojiro graters are made using natural solid materials and traditional finishing techniques that celebrate the inherent beauty of the wood and sharkskin. Variations in grain, texture, colour, and subtle markings are natural characteristics of authentic craftsmanship. Over time, the wood may develop minor changes that reflect the living nature of the material and add to its unique character.

We use a selection of reputable national courier companies for deliveries, depending on the delivery address.  Your parcel should arrive within 3-5 working days of receipt of the order or POP, if an EFT. Rural delivery may take a little bit longer. We will always advise if there is an expected delay.

All delivery costs for products delivered within South Africa are based on a flat rate fee, if under R1250 in retail value. R105 for within Cape Town and R120 for National. We also offer a Collection option which is free of charge.
