Koshihikari is the most widely produced variety of Japanese rice in Japan, but the rice produced in Niigata Prefecture is superior to others in terms of production, texture and taste. This rice meets all of the requirements of the best sushi masters, grain purity, roundness, shine, texture, roundness in the mouth, and is extremely tasty and fragrant.
Niigata's rice paddies are made of fertile clay soil carried from upstream by large rivers such as the Shinano and Agano Rivers, and they are rich in nutrients necessary for rice cultivation, so there is no need to use a lot of chemical fertilizers.
