These thin sheets of Japanese cedar are generally used to grill items like fish, chicken and vegetables on a Konro, Shichirin or Hida Konro grill.
For best results soak the sheets in water for 15 minutes before use and place on top of the grill. The cedar steams on the grill and imparts a rich smoky character to the food.
They can also be used in the oven under a roast or to cook whole / fillets of fish.
